Sweet pie

Ingredients

For 6 people:

  • 1 shortcrust pastry or shortbread
  • 800 gr of pumpkin
  • 2 whole eggs
  • 2 egg yolks
  • 20 cl of fresh liquid cream
  • 150 gr of sugar
  • 1 bag of vanilla sugar
  • 1 pinch of nutmeg (or cinnamon!)
  • 1 pinch of salt

Recipe

  1. Steam the pumpkin for 15 to 20 minutes.
  2. Puree it.
  3. Add the cream, eggs, sugar, nutmeg and salt.
  4. Mix well.
  5. Unroll the dough in a pie dish and prick it with a fork.
  6. Pour in the preparation.
  7. Bake for 30 to 40 minutes at 180°.

Enjoy it cold - with a dash of whipped cream or a scoop of vanilla ice cream!

Savory pie

Ingredients

For 6 people:

  • 1 shortcrust pastry
  • 400 gr of pumpkin
  • 1 onion
  • 2 whole eggs
  • (1 egg white)
  • 2 tablespoons of creme fraiche
  • 1 tablespoon of chopped parsley
  • 50 gr of parmesan
  • 50 gr of grated Gruyere
  • 25 gr of butter
  • 1 pinch of salt
  • 1 pinch of pepper

Recipe

  1. Preheat the oven to 180 °.
  2. Cut the pumpkin into small cubes and mince the onion.
  3. Brown them in butter and continue cooking until you obtain a puree.
  4. Let the mixture cool.
  5. Add the whole eggs, the parmesan, the gruyère, the cream, the parsley, salt and pepper.
  6. Roll out the dough in a pie dish, prick it with a fork and pre-cook it white for 15 min - or coat it with egg white.
  7. Pour in the preparation.
  8. Bake for 30 to 40 minutes at 180°.
